WHere is a simplified take on a drink from a new cocktail list. This is a party-sized pre-mixed that is packed with the flavours of a festive period, rendering it ideal for a holiday party. Reserve the remaining citrus syrup to use in brunch beverages, sweets, or to make another batch of the drink.

For the Citrus Syrup (makes 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g fine sugar
Ingredients for the Premix (yields 850ml, serving 10)
400ml good quality vodka
100ml London dry gin
150ml peach liqueur
200ml citrus syrup (as made above)
Fresh cranberries, for garnish
Mandarin essential oil, for finishing
Method
Making the Cordial: Place all the components into a saucepan, bring to a gentle boil, mixing to dissolve. Next, turn off the burner and let it to reach room temperature fully. Decant into a clean bottle, seal and refrigerate it in the fridge, where it will keep for up to a month.
Preparing the Batch Mix: Mix every spirits and syrup in a sizeable container, let it rest for one hour, then filter it best through a fine cloth, to ensure it's perfectly clear.
For serving: Measure 85ml from the cocktail base to a cocktail shaker packed with ice, and stir lightly for one minute to chill. Filter into an cold coupe glass or a similar vessel, top with the cranberries and finish using a quick spritz of the essential oil over the drink.
